Our 100% grass-fed mutton rack, expertly French trimmed, is an impressive centrepiece with rich, full-bodied flavour. Raised outdoors on our organic and regenerative pastures, our sheep graze naturally, developing mature meat that’s tender and deeply satisfying.

Sear the fat side until crisp, then roast until just pink for a dish that’s both rustic and refined. Add a herb crust with rosemary and garlic, or keep it simple with sea salt and cracked pepper. Slice into cutlets to serve individually, or carve at the table for a striking main course.
