Beef Picanha (Rump Cap)
Our 100% grass-fed beef picanha, also known as rump cap, is a showpiece cut famed for bold flavour, tenderness and its generous fat cap. Raised outdoors on our organic and regenerative pastures, our cattle graze naturally, producing beef with excellent depth, texture and provenance.
Cut from the top of the rump, picanha is best cooked whole with the fat cap intact so it can render, baste the meat and caramelise beautifully over heat. Sear fat-side down, then roast, grill or cook over charcoal for a classic picanha-style barbecue. Rest well before slicing against the grain for tender pieces packed with flavour. Serve with sea salt, chimichurri, roasted vegetables or summer salads.
