Our 100% grass-fed lamb rack, expertly French trimmed, is an elegant centrepiece with delicate texture and outstanding flavour. Raised outdoors on our organic and regenerative pastures, our lambs graze naturally, which gives this premium cut its tenderness and depth of taste.
Sear the fat cap in a hot pan, then roast until the meat is blushing pink. Finish with a herb crust of parsley, rosemary, garlic, and breadcrumbs, or keep it classic with sea salt and cracked pepper. Serve as a whole rack for carving at the table, or slice into cutlets for a refined starter. Rest well before slicing to keep the juices in.
