Beef (Ox) Tongue
Our 100% grass-fed beef tongue is a traditional delicacy known for its tenderness, depth of flavour and excellent eating quality when prepared slowly. Raised outdoors on our organic and regenerative pastures, our cattle graze naturally, producing wholesome beef with rich, savoury character.
Ox tongue is best simmered gently for several hours with vegetables, herbs and seasoning before peeling. Serve warm with mustard sauce, slice thinly for sandwiches, or cool and press for a classic cold cut. It is also excellent cured or brined for traditional dishes such as salt beef tongue. A true slow-food cut, tongue rewards careful preparation and reflects the value of using the whole animal well.
