Beef Oxtail
Our 100% grass-fed beef oxtail is a traditional bone-in cut, loved for its rich, gelatinous texture and deep flavour when slow-cooked. Raised outdoors on our organic and regenerative pastures, our cattle graze naturally, producing beef with exceptional taste and strong provenance.
Cut from the tail, oxtail contains bone, meat and connective tissue that break down slowly to create a glossy, full-bodied sauce or broth. Braise gently with red wine, stock, onions, carrots and herbs for a deeply comforting stew, or cook low and slow in a pressure cooker for a rich broth. It is also excellent in soups, ragù and traditional nose-to-tail recipes.
Nourishing, full-flavoured and wonderfully satisfying, oxtail is a brilliant way to make the most of properly raised grass-fed beef.
