Beef Shin (Stewing Steak)
Our 100% grass-fed beef shin, also known as stewing steak, is a cut made for slow cooking, rewarding patience with deep savoury flavour and fork-tender texture. Raised outdoors on our organic and regenerative pastures, our cattle graze naturally, developing rich, full-bodied beef with proper provenance.
Cut from the lower leg, shin is high in natural collagen, which melts during long cooking to create a silky, glossy sauce. Use it for stews, ragù, slow-braised dishes, pies, broths or casseroles that fill the kitchen with comforting aromas. Brown first, then cook gently with stock, wine, tomatoes, herbs and vegetables until the meat falls apart.
Honest, hearty and full of character, beef shin is slow food at its best.
